Seriously, this ground turkey soup recipe is so simple to prepare, and the flavor just can’t be beaten.

I really love utilizing ground turkey in recipes. In fact, my ground turkey stuffed peppers are currently the most popular recipe on my blog—for good reason. Be sure you don’t miss it!

I think that people may shy away from using ground turkey in their favorite recipes, but, I find that it’s a tasty replacement for ground beef.

In fact, I strongly prefer ground turkey in my vegetable soup and my family agrees that this recipe is a winner, hands down.

I also love this ground turkey vegetable soup because it’s not fussy. It’s similar to the veggie soup that my grandma used to make when I was a kid!

This is actually a cornerstone dinner recipe in my home and one that I come back to over and over throughout the year.

I adore hearty soup recipes when the weather begins to cool down in the fall. There’s just something so comforting about a big bowl of vegetable soup. Honestly, I could eat this soup every day, and I do thoroughly enjoy my leftovers for days after I make this soup.

I’m often asked by my readers if my soups freeze well. While I haven’t frozen this soup, I think it would do great in the freezer. I’m going to give that a whirl very soon and I’ll report back with my results! :)

Ground Turkey Vegetable Soup Recipe (5)

Yield: 6-8 servings

Ingredients

  • 1 lb. 93% LeanGround Turkey(7% Fat), browned
  • 1 tablespoon olive oil
  • 2 large carrots, sliced
  • 2 large stalks celery, sliced
  • 2 medium russet potatoes, diced
  • 1 medium onion, diced
  • 1 (14 oz. can) diced tomatoes
  • 1 (6 ounce can) tomato paste
  • 6 cups chicken broth
  • 1 (15.25 oz. can corn) drained
  • 1 ( 14 ½ oz. can green beans) drained
  • 3 cloves garlic, minced
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Brown the ground turkey and drain if necessary; set aside.
  2. In a large stock pot (I use this one) add 1 tablespoon of olive oil. Sauté the celery and the carrots for 3 to 4 minutes. Add the onion and continue to simmer another 3 to 4 minutes.
  3. Add the diced tomatoes, chicken broth and the tomato paste, stir until well blended. Add the corn, green beans, browned turkey, garlic, thyme, oregano and the potatoes, stir until well blended. Add the bay leaf. Bring to a boil then turn down heat and simmer for 30 to 35 minutes or until vegetables are tender. Remove bay leaf and serve.

    I’ve made this recipe three times in the past 2 weeks. I made the all vegetable version, the version with chicken and one with turkey. All of them are very good but the turkey version was everyone’s favorite.This is an excellent recipe, easy to prepare and very healthy. I will leave out the potato and add some quinoa and lots of veggies. Thank you for this healthy and low cost dish!!

    I made this soup tonight. It’s very tasty. Changes I made… used 1 can of whole potatoes (boiled and changed water with each boil (2xs) eliminate some sodium); used only a couple slices of onions, as we’re not real fond of heavy onion flavor; small can of green beans; Vegetable Stock (unsalted), one container (4 cups instead of 6 cups in recipe). For those that asked in your comments; my food tracker came up with a total of 1352 calories on my ingredients – recipe made 9-10 cups; which would equal approximately 135-150 calories per serving. (1352 calories/105 protein/154 carbs/35 fat. All approximate numbers. (see if my husband can tell it’s turkey meat and not hamburger)

    I made this last night and loved it. I only had beef broth at home but still thought it was great. I also simmered uncovered to let the soup thicken even more.

    I am making this today, as it’s COLD! I am having to make some adjustments for what I have in the house. I am using 2 vans of VegAll canned vegetables versus fresh. I dont have celery so I am adding a pinch of celery seed, but everything else I have. Im serving it with some corn bread muffins(sweetened with honey)

    I made this today for the first time. It was delicious. I used frozen mixed vegetables and left out the potatoes. I also added Trader Joe’s Seasoning Salute instead of salt and pepper.

    We use ground turkey a lot in my family. I was searching for recipes using ground turkey and wanted to try something different! I found your recipe and I made this soup for dinner last night; it was delicious!! Will definitely make it again!! Thank you for sharing it!! Since I decided at the last minute to search for something to do differently with ground turkey, I had to substitute some ingredients!! So I didn’t have a diced tomatoes, and I used crushed and I didn’t have a can of tomato paste, but I added a few squirts from tube. I didn’t have celery, so I used frozen peas & carrots and added some baby yukon & red potatoes and I had a purple potato; it really looked pretty and tasted sooo good, especially since it was soooo cold last night; it really hit the spot!

    I make this soup quite often to take to work for my lunch. The only change I make is substituting white beans for the potatoes. That makes it zero points on my WW plan. Love it!

    Oh my gosh! My husband quit eating red meat about a year ago, and I wanted to make soup with ground turkey and found your recipe. It is so delicious!!! I make it all year round now when that craving for veggie soup rolls around. Sometimes I add some browned sliced turkey smoked sausage along with the ground turkey.       Good recipe, I did also change it up a bit, instead of Zucchini I used Eggplant, and I also added Green Peas, all in all good soup.

    Your soup is amazing. Especially while “shelter at home” . The only changes I made was to add a can of navy beans and I had an Italian seasoning mix I used instead of the oregano and thyme. Excellent!

    Just made this and eating it now. It’s very tasty and easy to make. I only bought one Caron of broth and there was only 5 cups in it. I didn’t want to go back to the store so I just used that. Found it was not quite soupy enough so I ended up adding the cup I was short on broth in water. Now it’s soupy enough and tastes just as good.

    I made this last night. I made the soup broth from chicken and turkey bones that I had frozen (I hate to waste anything). I cooked them in the crock pot then added that to the onions after straining out the bones. I used left over turkey instead of ground, since I had that on hand. The soup was fantastic. My nephew doesn’t like tomato based soups, but he went back for seconds. Thank you so much!

    Love this soup! I make this very low sodium by using no salt added veggies and tomatoes and paste! I omit the potatoes and add egg noodles instead. So good!

    Great Recipe!! ???? I did a little more of everything that the recipe called for, because my family loves this soup. I added a can of tomato sauce and a little water also, AND some okra. And I seasoned my turkey very heavily with Lawry’s seasoning. Plus I made lot of extra seasoned turkey and sat in a bowl on the side in case anyone wanted more meat in their bowl. They complained last time that there wasn’t enough meat in the soup (when I made it exactly by the recipe). Thanks for sharing.

    I eliminated potatoes and replaced with dark red kidney beans, because potatoes do not freeze well and the beans even add more color to this delicious soup . Also added fresh Baby spinach torn, Roma tomatoes, and frozen peas. I freeze this beautiful soup in wide mouth glass jars and thaw overnight in the fridge.

    I have had this recipe for some time now, and I had copied down the nutritional facts at that time, unfortunately at the time did not have to worry about sodium. I was wondering, do you have the full nutritional facts for it as I love to make it, but soups tend to be high in sodium.

    I mad me this tonight. I’m just learning how to cook and I found this to be pretty simple! I used no salt chicken broth and no salt diced tomatos, I’m sensitive to salt. This soup has a really good flavor! I will definitely be making it again.
